Heritage Grains
Before hybridization, genetic modification, and fortification, our great grandparents ate what are now considered heritage wheat varietals.
They are not only superior in flavor and texture, but many report them to be more digestible. I know that was the case for me.
I source heritage wheat from small farms in Wisconsin and Minnesota, mill the wheat berries freshly for each batch, and harness the power of sourdough fermentation to further enhance flavor and digestibility.
Grass-fed Butter
My delicious and aromatic browned butter starts with the best butter, sourced from a 100% grass-fed organic dairy in Northern California where the cows are pastured year round, regenerating the soil and building biodiversity.
It is a privilege to work with butter that was created the right way, without corn, soy, and grain.
Pasture-raised Eggs
My dark-yolk eggs are produced by heritage hens raised on traditional small family farms with regenerative and humane certifications.
They live full-time on pasture and each hen has around 100x the roaming space mandated for “cage free” hens.

Couverture Chocolate
Couverture chocolate is renowned for its rich flavor and smooth texture.
My organic milk and dark couverture chocolates are sourced from a small-batch producer who makes them without emulsifiers and preservatives.

Bourbon Vanilla Extract
My homemade vanilla extract contains three ingredients: Kentucky bourbon, organic vanilla beans, and time.
Brown glass jugs protect the extract as it matures over a period of 18 months, yielding an extract that isn’t just free from commercial alcohol and additives, but that is good enough to drink!
Sugars
Minimally refined organic cane sugar, organic turbinado sugar, and organic molasses add sweetness, subtle caramelization, and the perfect crunch.
I never use “white” refined table sugar, pre-mixed industrial brown sugar, corn syrup, or artificial sweeteners.
Spices
Organic candied ginger with only two ingredients (ginger and cane sugar) was chosen for its clean flavor, distinctive heat, and tender texture.
Ground organic cardamom and cinnamon were selected for freshness and potency, enhancing depth of flavor and aroma.
Minerals
My commitment to quality doesn’t stop when it comes to inorganic ingredients.
Maldon brand sea salt contains trace minerals and is crafted using traditional methods in an area of Britain that has produced salt for nearly a millennia.
My sodium bicarbonate (baking soda) and non-gmo cornstarch-free baking powder are made in the USA.
